Crawfish Elegante’

I’ve shared so many of my Grandmother’s recipes here that I’m a bit worries my cousins are going to hunt me down for giving away family secrets. Well, I would be worried except that my cousins and I all feel the same way about our Grandmother… that she was the warmest, kindest, most loving woman on the planet and that if we can be just a little bit like her in our lives, we’ll be doing things right.

Somehow she made all of her children and her grandchildren believe that we were her absolute most favorite (and, you know what, I bet we ALL were.) She was forever sewing something for a friend, or cooking something delicious for one of us, or making up something fun for us to do together.

My cousin, Amy, gave us the most wonderful Christmas gift a couple of years ago…she painstakingly typed up and bound all of Grandmother’s recipes into a cookbook of sorts.I use it every week at least once, and I’d bet they do, too (if they haven’t memorized the recipes yet.) Grandmother has some Louisiana roots, which is why a bunch of her best recipes have a creole/New Orleans flair.

Her recipe for Crawfish Elegante’ is a super delicious, very versatile dish that can be made ahead, frozen, and eaten in a variety of ways. It’s perfect for spring when crawfish are in season, but also pretty great whenever as you can get frozen peeled crawfish at the store. Here, I’m sharing it as a dip with toasted New Orleans French Bread, but it’s also great over rice as a main dish OR as a filling for puff pastries. We also had it as a catfish topping this same night, and as my cousin Virginia would say “it didn’t suck.” 😉

A Casual Red Beans & Rice Valentine’s Day Soiree!

IMG_1292Every week, I’m going to try to share a story of hospitality, a fun party that I’ve hosted or attended, or just wisdom from other folks about what it means to provide a warm welcome.

This year we’d tried to have a fun winter bonfire out on our farm back in late December, (I was hoping for an Appalachian “Breakin’ up of Christmas” theme, but the weather DID. NOT. COOPERATE.

I mean, who wants to have a bonfire, eat red beans and rice, and make s’mores in rainy 80 degree weather? Not me or anyone I know. But we’d already made all the red beans and rice, and they freeze pretty well, so we just rescheduled for a later date. We chose Valentine’s day since Sundays are GREAT farm party days, and since our place is named Redstone Farm after the Choctaw word for the creek that runs down the middle, we went with a RED theme on Valentine’s Day.

I know… everyone has mixed feelings (or super negative or CRAZY positive feelings) about this greeting card holiday, but who has mixed feelings about hot cocoa, friendship, and the great outdoors? Better not say that you’re that person… fun sponge. 😉

I know it’s a little out of season, BUT I wanted to share these photos that my wonderful and super talented friends from Studio 5Fifty and Scruggs Photography in Laurel took for me and tell you a little bit about the party. Midnight Snack Perfection: Fudgey Chocolate Pecan Brownies

IMG_1380 The fellas in our house have a serious sweet tooth around, say, 10pm. They always want just a little taste of chocolate, and sometimes they squirrel away tootsie rolls, Oreos, or whatever little snack they can to munch on while everyone else is tucked in bed. We had a brand new carton of Blue Bell vanilla ice cream and a bag of pecans, so it just seemed right to make a batch of fudgey, gooey brownies that would be perfect for sundaes before I went away to the Southern Foodways Alliance Food & Media event last weekend…. as a little thank you for making sure my little guy didn’t miss me TOO much.

This was a super duper easy recipe, and if you’ve got a nut allergy or just aren’t into pecans, then you can leave them out and still make a killer brownie sundae. Also, I added a little coffee and bourbon since people swear that coffee HAS to be added to chocolate, and because I love bourbon, but I can’t totally swear that they made a huge difference. Since they were so good, though, I can’t say that they didn’t. 😉

Homecook How-tos: The Ice Ring

What you need:
3-5 lemons, sliced in rings
green herbs (mint and thyme are my faves)
6-10 cups of boiled water
1-2 cups of ice
A bundt pan
Now, there’s something to know about ice rings… whatever you want to show up on the TOP of the ice ring should be on the bottom of your bundt pan. This means that unless you have a clear glass bundt pan you won’t really know what the ring will look like until you unfreeze it. As you’re positioning your lemons and herbs, just be sure to put enough greenery underneath the lemons so it shows up. Then, you’ll want to add some water (just enough to freeze all your stuff together NOT enough to float the lemons and herbs). You’ll also want to add about 1-2cups of ice to weigh all the lemon slices down and make sure they didn’t float. Then, you’ll put the whole shebang into the freezer for about an hour.

At this point pull out any ice that didn’t freeze, and add another layer of water, then freeze it. Do this two more times.

When it’s time to remove your ice ring, flip the bundt pan over into your punch bowl, wrap a warm, wet towel around it, until the outside of the ring melts and it falls out.
You may find that your lemons/herbs/whatever else you used to decorate your ring may be covered in a bit of water. You can use a hair drier to melt a bit of that water so that your ring looks snazzy. This isn’t totally necessary as the whole thing will slowly melt into your punch anyway. 😉
 
it’s so easy, right? and so lovely…. I wish punch in bowls was more of a thing! I think I’m going to try to bring it back since punch in jars is so popular at swanky bars.

To Make Great Gelato, First Build Relationships.

Can I tell you about some of the most delicious stuff I’ve ever put in my mouth? Sweet Magnolia Gelato comes out of Clarksdale, MS, a small town I’ve had the pleasure to live in, and one with arguably the best downtown revivals happening in our region, in my opinion.

Since we moved away from the Delta, I’ve been following Sweet Magnolia on Instagram and just wishing

I could get my hands on some of their really innovative frozen treats… brown sugar and bourbon, salted pork fat caramel, buttered pecan, and Miss Mary’s lemon pound cake gelato, for example. Or you know, I’d settle for just some sweet cream or chocolate chip once in awhile. THEN Instagram told me I could get some in Jackson at the Whole Foods. Y’all, even though we’re still an hour and a half away, this is AMAZING news.

How, how, how did this tiny ice cream/gelato/sorbet company in the Mississippi Delta become an incredible, delicious, truly rich delicacy? And since I care about small towns and community, what has this business meant for Clarksdale? For entreprenuership? What’s the guy who runs it like?…

Packing a Punch: Virginia Bourbon Punch

IMG_1919 OH y’all… on weekends like we’ve had, I feel like a little daffodil peeking out of my leaves and praying for more warmth and sunshine. I LOVE winter, but gosh, when the sun is warm and bright after some grey, cold weeks, I just can’t help but get excited for spring.  Yesterday it was so gorgeous and Wagner and I were having so much fun being outside, I called my friend Lauren to come over for a drink on the porch. She couldn’t make it, but I had made a batch of a punch that is JUST RIGHT for warm, sunshiney days, so I had a little sip by myself. 😉 You’ll DEFINITELY want to make your own batch for this weekend, but since it has to steep for a couple of days, make it NOW so you’re ready for your weekend picnic, or porch sitting, or tailgating.

Bacon-Dijon Brussel Sprout Slaw with Cornbread Croutons

I refuse to be ashamed. I made this absolutely delicious slaw-salad ONLY for myself for lunch this week. I didn’t share it, I didn’t even offer to make it for my honey or my folks. I just whipped it up and ate it. In my defense (but, I’m not ashamed…) no one else was even home for lunch this day, and even if they  HAD been, there were only a couple of brussels sprouts left over from supper the night before. But it was so good…maybe I should have made it for the anyway. ugh. I guess I am a little shamed. At least I can share this crazy fast, easy-peasy recipe with y’all and YOU can make it for whoever happens to be home for lunch.

Uber Hospitality

“No way!” my friend Emmy exclaimed. “I guess that means I’ve seen you play.”

We had just learned that our DC Uber driver was not only the owner of a local fitness company but also a former Arena Football League player in Lubbock, TX. Emmy was a Lubbock native and had seen several Arena League games during the time he had been playing.

The next day, my driver was a Justice Department employee who was finishing his Ph.D. about the connection between emotional intelligence and ethical behavior in American police forces. A different driver worked for an alternative-energy company that gave away free solar panels, and still a third was an immigrant who’d moved to the US speaking no English at all, and who had recently graduated from college and was trying to get a job in social media marketing.

It’s no secret that I’m one of those people who talks to everyone. Hearing people’s stories, learning about their lives, their families, their interests are some of my favorite things in the whole world. I learned it from my dad, who goes out of his way to make friends from the grocery store check out line to the airport terminal. We just can’t help it… we love people.

Maybe that’s why I think Uber and Lyft are just so darn fantastic. It’s an awesome chance to make new pals and learn new things.

If you’re wondering how this plays out… well, I ALWAYS sit in the front seat. It gives me a better chance to connect in real ways with Toni, or Ron, or Damien. And I also ALWAYS ask them if driving is a hobby or their day job. If it’s a hobby, then I dig into what they do 9-5 and why they do it. In my experience, after talking to these people for about ten minutes, most of the drivers are the coolest, most interesting people who use driving as a way to earn a little extra cash.

For example, this weekend in Birmingham I had three different lovely souls as my drivers. Sure, one guy ended up telling me a little too much about he and his wife’s sex life, but he was playing Bob Marley the whole time and opened our ride with “Good Morning! I am SO full of JOY!” which is really a fantastic way to start a Saturday morning. Another driver who was a retired factory worker shared his memories of living in Birmingham throughout the Civil Rights Movement, and gave me his sister’s account of the Children’s March, since she participated in it and was jailed with hundreds if not thousands of other Black children who stood up for justice and equality.

I am obviously disturbed by the story in the news of violence and murder in Kalamazoo.  Nothing justifies that driver’s actions, and my heart goes out to the victims. I’ve had great experiences with Uber and Lyft drivers, though. They are just folks riding around a city, picking up people and making a little cash so they can continue to follow their dreams and keep up a decent quality of life in a place where the costs of living just keep rising.

For me, Uber has been a way to meet truly interesting people and try to see the city I’m visiting through their eyes. By driving around and telling me about their own passions, ideas, and experiences they are showing me real hospitality and giving me a peek into their lives even though we’ve just met. It’s more than a financial transaction…it’s a real, meaningful interaction between two souls.

Because I personally find so much energy and joy through these moments, I’m not going to let the news media scare me from using these services, and I hope you won’t either. Delta BBQ’d Pecans

When I was in high school, this cute little gift boutique gave me a holiday job wrapping presents. I think I spent most of the money I earned buying these crazy expensive praline pecans that we sold there so I could stuff my face while I worked… typical.But on the upside, I was REALLY able to sell the you-know-what out of those pecans to just about everyone who walked in.

I’m not going to try to do that to you, but I will tell you that these BBQ pecans are mighty fine as a happy hour snack, afternoon pick me up, party-food, or a little nibble between the hours of midnight and the next night at 11pm. They’re just the right amount of salty, crunchy, roasty, and spicy and turn just the most lovely brown color, and also go super well with a robust craft beer or bourbon cocktail.

Plus, they are SUPER easy.

Friday Finds.

  • Have you ever been totally befuddled by the coffee aisle? I needed some good coffee to celebrate Cafe Au Lait day this week, and got stuck. My honey will tell you that I’m the SLOWEST decision-maker on the planet (I prefer “deliberate”) so even my grovery store runs take longer than they should. The coffee aisle is the worst…. too many choices! My little dude, Dubs, took advantage of my distraction to open nearly all of the squeeze pouches in the buggy. *sigh*
  • Well, there’s a storm a-brewin’ in the southern food writing world, it seems. Bitter Southerner published an article about the takeover of southern food writing by men (calling them “the new carpetbaggers”) and Southern Foodways Alliance took issue with it. Read both perspectives and tell me what you think.
  • I laughed SO hard: Is this a super southern crime or THE MOST southern crime? (hint: it involves alligators and fast food drive-thrus.)
  • How badly do I wish I’d been the person doing this interview? Allegedly he came to Jones County for research for the Free State of Jones movie. Think he’ll come back for the premiere?
  • They announced the James Beard award nominees this week.. everyone on my feeds seem to be twitterpated about it all. Which nominee are YOU most excited about?
  • Oh y’all… I want to be these two super cool gals‘ pal, badly. Their instagram feed tells me that they spend their days around and about Charleston, SC, wearing super chic outfits and taste-testing cocktails. Um, dream job. On top of that, their blog has great cocktail recipes and more!
  • This recipe showed up in my bloglovin feed awhile ago and I’m DYING to try it. Pinch of Yum’s Creamy Sweet Potato Thai Curry… they had me at sweet potato and then they said Thai Churry. What???
  • I’m heading out in a few minutes for my first SFA Food & Media Symposium. Birmingham, Alabama, here I COME! I’ve been having nightmares about spilling my cocktail on John T. or slipping and falling and letting everyone see my underpants, so wish me luck and grace this weekend.
