This week at the store I had a little freak out. I looked around and noticed that watermelons, peaches, and corn were on sale. BIG time sale. For Labor Day.
Know what that means? Summer is ending, officially. No more seersucker. No more white dresses. No more white shoes (do people even wear white shoes?) I know everyone is getting excited about the advent of pumpkin-spice deodorant and pumpkin-flavored cheeseburgers and what not, (Before you get offended, know that I’m VERY excited about this, too) but still, I can’t help but feel like my toddler when I just told him that no, he can’t eat the entire bag of cheetos by himself (he’s started hanging his head, poking his lip out, and mumbling sadly). I HATE summertime hot weather, but I LOVE summertime produce.
Anyway, I panicked and ended up buying 6 watermelons, 38 peaches, and 15 pounds of sweet tri color corn. (Just kidding, I bought reasonable amounts of these things, but it was on the higher end of reasonable.) Then, I had to figure out what to do with it all.
No one in my whole family likes cous cous but me, so whenever I make it, I have to make it JUST for me. I like it best when its got crunchy bits and sweet bits AND savory bits, so I got to thinking… what about corn, peaches, and bacon?
Turns out it worked GREAT and it was just the most wonderful end of summer lunch. Even my cous-cous hating family thought the flavor combo with a big ole juicy chicken breast as the main dish was dynomite.
- 2 Juice, Ripe peaches, diced
- ¾ Cups of cous cous, cooked to the directions on the box
- 5 slices of bacon, cooked the way you like it
- 1 ear of corn, boiled and cut off the cob
- 1 Tablespoons olive oil + 1 tsp bacon grease
- ¼ onion, minced
- Salt & Pepper to taste
- 3 Tablespoons balsamic vinegar
- 3 basil leaves, chiffonaded (AKA cut into thin ribbons)
- Boil your corn and let it cool. Cut it off the cob.
- Cook the Cous cous according to the directions on the package, fluff with a fork and set aside.
- Bake or fry the bacon, and let cool.
- In a large skillet, add 1 tsp of bacon grease and sautee' the onion until translucent.
- Add in the corn, the bacon, and the cous cous, salt, pepper and balsamic vinegar.
- Add in the peaches and basil and serve.
